The coffee is roasted on the spot, in the bar, and the machines used are first class. The complexity of the coffee roasting process is further confirmed by the fact that this process uses special software that, by measuring the levels of acidity, sugar and bitterness, seeks the perfect "matches" on the basis of which the coffee is roasted.
